How the Millers Found Chicken Salad Chick
The Millers’ connection to Chicken Salad Chick started far from Nebraska. During a trip to their getaway condo in Destin, Florida, Scott and Tisha tried the brand for the first time. One visit was enough to convince them they wanted to bring it home.
That instinct was backed by decades of business experience. Scott has spent more than three decades as owner and agent of Miller Farrell Insurance, a career built since 1991, while also working as a real estate agent with Gude. Tisha spent 25 years running the family farm before shifting gears in 2021 to join Miller Farrell Insurance as an agent herself.
Together, they have built careers around steady leadership, customer service, and navigating change, skills that translate directly into franchise ownership.
Family as the Foundation
For Scott and Tisha, family sits at the center of every major decision, and this venture is no different. Together they are raising six boys, and 2026 is already shaping up to be a milestone year. Three of their sons are getting married, and the couple is welcoming their first grandchild.
Scott and Tisha are also deeply rooted in Nebraska life. They are proud Nebraska Husker fans and members of the Nebraska Leadership Society, ties that reflect the same community-first mindset Chicken Salad Chick looks for in its franchise partners.
“We are excited to share Chicken Salad Chick with Nebraska! The company’s strong values resonated with us, and we are grateful for this opportunity,” said Tisha. “Scott and I are looking forward to sharing this experience with our boys and our growing family.”
The Millers plan to develop seven locations across three high-growth Nebraska markets. Omaha and Lincoln offer dense populations and strong demand for fast casual dining, while Grand Island extends the brand’s reach into a growing regional hub. Together, these three cities give the Millers a strong foundation for building density and brand recognition across the state.
Nebraska Joins a Record-Breaking Growth Streak
Chicken Salad Chick’s first entry into Nebraska reflects the brand’s continued push into new regions of the country. It arrives during one of the strongest growth periods in company history:
- More than 340 Chicken Salad Chick restaurants are open nationwide
- Another 52 restaurants were sold during the first quarter of 2026
- No. 3 ranking on Fast Casual’s Top 100 Movers & Shakers
- No. 158 on Franchise Times’ Top 400 (2025)
This latest signing extends that momentum into a new state and reinforces a growth strategy centered on finding the right local operators, not simply accumulating new markets. With Scott and Tisha at the helm, Chicken Salad Chick is well-positioned to establish a lasting presence across Omaha, Lincoln, and Grand Island in the years to come.
