Our First Customer

The Chicken Salad Chick, LLC opened on January 7, 2008. Located at 555 Opelika Road Auburn, AL, this new concept has taken off in a frenzy. If you enjoy the freshest ingredients, mouth-watering delicious offerings, and friendly service, The Chicken Salad Chick is definitely the place for your next meal.

Most of the time a restaurant is born from a small idea, and our's is no different. Stacy Evan's, "The Chicken Salad Chick" tells her story and how the idea was set into action.  
    I have always been on my own personal quest to find the perfect chicken salad.  Every restaurant I entered, I would order the chicken salad sandwich. The funny thing about chicken salad is that everyone’s idea of the “perfect” one is so completely different, although we all pretty much agree that chicken and mayonnaise are the two key components.  So after tasting every chicken salad I came across and realizing everyone’s idea of the perfect recipe is different, the chicken salad chick evolved.  This is a place all chicken salad lovers can find something they enjoy.  With 12 different chicken salads to choose from there is something for every palate.

    I began working on my original recipe at home and taste testing on my cooperative and wonderful neighbors.  They were kind enough to give me honest feedback as I kept tweaking.  I finally arrived with a recipe where the consensus was that this “was it.”  Thanks to my neighbors and the teachers at Ogletree Elementary School within 3 weeks it was more business than I could handle.  I then formed a partnership with Kevin Brown, who had shared this vision with me from the beginning. He had the experience and business sense to turn a recipe into a restaurant.  So business was booming, word was spreading, the idea of a restaurant was growing and Ring! “Mrs. Evans….” “Yes?”  “This is Stan from the Lee County Health Department……Where are you cooking your chicken?”  “In my kitchen Stan… is that a problem?”  “Yes, Mrs. Evans.. that is illegal.  You cannot cook anything in your home and sell it.”  “Thanks Stan." So we had to put a halt to everything.  Our customers were outraged and some tried to get some smuggled anyway.  Jeffrey Tucker, the Vice President of the Ludwig vonMises Institute and a customer of mine wrote in a blog entitled “Chicken Salad Chick Shut Down,” that “…..this girl has been shut down, not because she is a threat to our health, but because she is a threat to the competition!”  Thank you Jeffrey.  Thank you also to the anonymous caller that turned me into the health department. You really lit the fire under Kevin to turn this idea into a restaurant sooner than ever!  Since that day he has worked tirelessly to turn this dream of ours into a reality.  This has truly been a collaborative effort by neighbors keeping my three children so I could work, by friends painting artwork on the restaurant walls, friends offering professional services free of charge, and my family’s undying support. Thank you everyone and especially Kevin……..thank you for never giving up. We did it!

OPENING DAY - Wow! With 40 pounds of our tasty chicken salads, emotions swelling, and the unknown filling our little 800 square foot deli, 10 AM came and so did the customers. Day one was a definite success! WE SOLD OUT....at 1:00pm! So for day two, we doubled the production to 80 pounds and guess what.....WE SOLD OUT AGAIN! So, of course, we looked at each other with a  bit of a smile and agreed, we may just have something people like. 
    Since that day we have been overwhelmed with positive feedback. We were excited that both The Auburn Plainsman and East Alabama Living featured our restaurant in their respective publications. We thoroughly enjoy seeing our customers show up with coolers in hand to take their favorite chicken salads out of town to share with their family and friends. In our first year, we have gone from 40 pounds of our salads per day to now selling 140 pounds per day. Our long anticipated dining room opened August 25, 2008. After numbers of our customers asked for it, the dining room is a place we hope you will find to be a cozy and inviting place to lunch with friends and coworkers. So thanks again Auburn for receiving us so well. We look forward to serving you a fresh and tasty lunch for many years to come.
