Meet the Longleys: Passion, Purpose, and a Chicken Salad Dream in Southwestern PA

For Jacob and Sabrina Longley, building a life together has always meant working side by side. From running a college diner to raising a young son while juggling deployments and restaurant operations, the Longleys have never shied away from hard work or big dreams. Now, they’re bringing their shared passion for hospitality and their love for Chicken Salad Chick to a new home: Southwestern Pennsylvania.

Hospitality Is in Their DNA

Sabrina’s journey in hospitality began early, working in the industry since she was 14 years old and eventually earning a degree in Hospitality Management from Penn State. She interned at the Biltmore Estate and quickly climbed the ranks after college, working in leadership roles with Chick-fil-A and later joining Chicken Salad Chick in 2018. From General Manager to Multi-Unit Operations Consultant, and ultimately serving as Integrator (COO) for Down The Street Eats, Sabrina has developed a well-rounded skill set across HR, marketing, and operations.

Jacob, a fellow Penn State alum, brings a different kind of leadership. A United States Marine Corps officer and naval aviator, Jacob has served his country since 2017, balancing roles in operations, public affairs, and administration. Even while deployed, he remained committed to his family, attending the birth of their son via FaceTime while stationed in the Red Sea.

Chicken Salad Chick: A Brand They Believe In

The Longleys’ connection to Chicken Salad Chick is both professional and personal. Jake’s favorite flavor? Barbie-Q. Sabrina’s? Fruity Fran. But more importantly, they believe deeply in what the brand stands for, warm hospitality, strong community ties, and a culture of service.

Having lived in five states in just eight years, the Longleys are no strangers to adapting and thriving in new environments. Their ability to improvise, lead under pressure, and serve others makes them the perfect pair to reintroduce Chicken Salad Chick to Southwestern PA.
